These sardines are cleaned and gutted manually one by one. Once cleaned, they are steam roasted to achieve the perfect consistency. La Brújula sardines are fished in the cold waters of the Atlantic, which means that they have a higher percentage of accumulated fat to resist lower temperatures. They are packed one by one and covered with spicy olive oil macerated with cayenne. Their small size, their delicacy, and their intense flavor with a very subtle spicy touch make them a unique product.
