The seas off the coast of Galicia in Northwest Spain are cool and rich in nutrients, making them an incredible fishing ground. Their facilities are very close to where the seafood is harvested, so they are able to use the freshest fish and shellfish available.\u003cbr\u003e\u003cbr\u003eWe have never tried a mackerel more delicate and mild than those of Galicia. They are harvested in small batches from the cool waters of the Rias, tidal rivers in north western Spain.
