These succulent, meaty anchovy fillets are fresh tasting and delicious.  The fillets are deboned and packed in a salty brine, not yet rinsed or packed in oil. Simply take the final step and soak them in water for 30 minutes. Pat dry and drizzle with extra virgin olive oil before serving.

Since 1940 L'Escala has been processing anchovies, salting the best fish (anchovy) and preparing semi preserved fillets marinated and in olive oil. This millenarian conservation technique, which allows to consume the summer captures of fresh fish throughout all year, were followed later by the Roman Civilization.

Nowadays, Anxoves de L'Escala continues with the same tradition and our "anchovies women" are responsible for such artisan process.

Anxoves de L'Escala only uses the "European Anchovy", Engraulis encrasicolus species, approved on all nutritional security European controls, unlike anchovies coming from other latitudes.
