Atun rojo (bluefin tuna) from Olasagasti, line-caught in the Cantabrian sea and preserved in extra virgin olive oil. Also known as Cimarron, it is the most exquisite product of the Cantabrian Sea. The tuna is meaty, tasty and intense in colour.
