Anchovy and Olive Tapenade
What a lovely combination this is. The perfect snack or an excellent addition to any meal! Also helps that it is easy to make!
1 can (2 oz) of anchovy fillets, drained
1/2 cup of pitted kalamata olives
2 cloves of garlic, minced
1/4 cup of capers, drained
1/4 cup of fresh parsley, chopped
1/4 cup of olive oil
1 tbsp of lemon juice
Salt and pepper to taste
In a food processor, combine the anchovy fillets, kalamata olives, garlic, and capers. Pulse until the mixture is finely chopped.
Add the chopped parsley, olive oil, lemon juice, salt, and pepper to the food processor. Pulse until the mixture is well combined and has a paste-like consistency.
Taste and adjust seasoning as needed.
Serve as a spread on toasted baguette slices, crackers, or alongside fresh vegetables.
