Cockle, Avocado and Tomato Tartare

We love using cockles to give this avocado and tomato tartare a seafood lift and elevating it to the next level! Bursting with fresh flavours but with plenty of depth, this dish makes the perfect lunch or even a fancy appetizer at your next dinner party. 

Serves 2 


1 Can of cockles 

2 Ripe tomatoes

1 Avocado 

Juice and zest of a lemon

1 Bunch of green onions






Such a beautiful and sophisticated dish and yet simple to prepare and in very little time.

Get a sharp knife and chop the tomatoes, green onions and avocado into pieces as small as you can; the idea is to have a tartare that consists of lots of lovely little bites.

Combine the chopped ingredients, along with the contents of a drained can of cockles, in a bowl. Add a good lug of your favourite EVOO and the juice of a lemon (keep the zest for the end).

Season well with both salt and pepper and present as fancy as you can/want. Here we used a serving ring to create height on the plate. This recipe is a great way of trying one of our favourite conservas, cockles. Did we say it is healthy too?!
