Garfish Cakes
A simple and tasty fish cake recipe using one of our favourite canned fish, garfish (also known as needle fish). They are a piece of cake to make (sorry)!
Ingredients:
1 can of garfish, drained and flaked
1/2 cup of breadcrumbs
1/4 cup of finely chopped onion
1/4 cup of finely chopped celery
1/4 cup of mayonnaise
1 egg, beaten
1 tablespoon of dijon mustard
1 tablespoon of lemon juice
Salt and pepper, to taste
2 tablespoons of vegetable oil
Instructions:
In a mixing bowl, combine the drained and flaked garfish, breadcrumbs, onion, celery, mayonnaise, beaten egg, dijon mustard, lemon juice, salt, and pepper.
Mix all the ingredients until well combined.
Form the mixture into patties, about 3-4 inches in diameter.
Heat the vegetable oil in a frying pan over medium heat.
Add the fish cakes to the pan and cook until golden brown on both sides, about 3-4 minutes per side.
Serve the fish cakes hot, garnished with lemon wedges, some salad leaves and your favorite dipping sauce.
This recipe is a great way to use canned garfish, and it's also a versatile recipe that you can adapt to your own taste by adding different herbs and spices.
