Tuna Belly and White Bean Salad
Tuna belly is a flavourful and nutritious source of protein that pairs well with the mild flavor of white beans. The dish is easy to prepare and can be enjoyed as a light lunch or dinner. It's also a great option for those looking for a quick and healthy meal that's rich in protein and fiber.
Ingredients:
- 1 can of tuna belly, drained
- A handful of cherry tomatoes
- 1 can of white beans, drained and rinsed
- 1/4 red onion, thinly sliced
- A few black olives
- Sliced cucumber
- 1 Hard boiled egg
- 1/4 cup chopped fresh parsley
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Parsley
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the drained tuna belly, white beans, red onion, tomatoes, cucumber and parsley.
- In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
- Pour the dressing over the tuna and bean mixture and toss to combine. Add the pieces of egg and some black olives at the end.
- Serve immediately or chill in the refrigerator for at least 30 minutes to allow the flavours to meld together. Perhaps serve with some lemon wedges.
