Tuna Belly Pesto Pasta

Ingredients:

  • 200g spaghetti
  • 1 can (about 120g) tuna belly in pesto sauce
  • 2 tablespoons grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • 1/2 cup black olives
  • 1 cup grape tomatoes, halved
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Cook the spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente (usually about 9-11 minutes). Reserve a cup of pasta water before draining the spaghetti.

  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for a minute or until fragrant. Add the flaked tuna belly & its pesto sauce to the skillet in the last 10 seconds of cooking. Just enough to heat it through,

  3. Add the black olives and halved grape tomatoes to the skillet with the pesto tuna and garlic. Cook for an additional 2-3 minutes, stirring gently, to warm the olives and tomatoes.

  4. Add the cooked and drained spaghetti to the skillet with the pesto tuna, garlic, olives, and tomatoes. Mix well to coat everything with the flavours. Toss everything together until the pesto is evenly distributed and coats the spaghetti, tuna, olives, and tomatoes.

  5. Season to taste: Taste the spaghetti and adjust the seasoning with salt and pepper as needed.

  6. Serve: Divide the Tuna Belly Pesto Pasta into individual plates or bowls. Sprinkle some grated Parmesan cheese on top and garnish with fresh basil leaves, if desired.
