This tuna comes from the ventresca or belly of the Yellowfin tuna, which in itself is an oilier tuna providing a richer flavour. The belly is one of the most delicious and tender parts of the tuna and its flakes are large, making them beautiful to present.
This tuna is so good, it would be great as an appetizer by itself or with some crackers or bread. It is also delicious placed on a salad, such as a simple tomato salad seasoned with sea salt and olive oil.
