Anchovies, fried in olive oil in the Basque way with garlic and cayenne pepper. Olasagasti feel that using a larger tin gives the anchovies space to move and become covered in the marinade.
A delicious part of a tapas selection, these anchovies are preserved in their flavourful oil and are lovely eaten as they are. The leftover oil from the can is also worth keeping to use for frying meat, fish or veggies.
