Creamy Garlicky Cod Pasta

This recipe is a delightful way to elevate canned cod into a gourmet meal. The creamy sauce complements the delicate flavor of the cod, and with the addition of fresh herbs and lemon juice, it becomes a restaurant-worthy dish. Ingredients

2 cans of Jose Gourmet Cod with Garlic and Olive Oil
8 ounces of your favorite pasta (linguine, fettuccine, or penne work well)
2 tablespoons unsalted butter
2 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken or vegetable broth
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 tablespoon lemon juice
Salt and black pepper to taste
Red pepper flakes (optional, for some heat)


Instructions:

 

Cook the Pasta:

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.

Prepare the Cod:

Drain the canned cod of its lovely garlicky oil into a small bowl. If the cod is in large chunks, break it up into smaller, bite-sized pieces using a fork.

Make the Creamy Sauce:

In a large skillet or saucepan, melt the butter over medium heat. Add the garlicky olive oil from the can and sauté for 1-2 minutes until fragrant.

Pour in the heavy cream and chicken or vegetable broth, stirring to combine. Let the mixture simmer for about 3-4 minutes, allowing it to thicken slightly.

Add Cod and Parmesan:

Add the canned cod to the creamy sauce in the skillet. Gently stir the cod into the sauce, making sure not to break it up too much. Let it simmer for another 2-3 minutes to heat the cod through.

Stir in the grated Parmesan cheese, continuing to cook until the cheese is fully melted and the sauce is smooth.

Season and Finish:

Season the sauce with salt, black pepper, and red pepper flakes (if using) to taste. Remember that the canned cod may already have some salt, so adjust accordingly.

Add the chopped fresh parsley and lemon juice to brighten up the flavors.

Combine Pasta and Sauce:

Add the cooked and drained pasta to the creamy cod sauce. Toss the pasta gently until it's well coated with the sauce and the cod is evenly distributed.

Serve and Enjoy:

Transfer the creamy gourmet canned cod pasta to serving plates. Garnish with some additional chopped parsley and a sprinkle of grated Parmesan, if desired.
