Produced in Santoña, the heart of Spain’s celebrated anchovy tradition, these Cantabrian anchovies from Pujadó Solano are a superb example of careful craftsmanship and exceptional raw ingredients.
The anchovies are caught during the spring fishing season, when they reach the Cantabrian coast at their plumpest and most flavourful. After being cured slowly in sea salt, each fillet is prepared entirely by hand. Skilled artisans clean, trim and arrange the anchovies with remarkable precision, preserving their meaty texture and beautiful appearance.
Packed in sunflower oil, which allows the character of the fish to remain firmly in the spotlight, these anchovies offer a deep, savoury flavour balanced by a clean maritime freshness. Their texture is firm yet tender, while the saltiness is pronounced but refined—exactly what you would expect from a premium Cantabrian anchovy.
Each 110g package contains approximately 10–14 generous fillets, making it ideal for sharing as part of an aperitivo or tapas spread. Serve them simply on toasted bread with butter, drape them over sliced tomatoes, add them to a Gilda, or use them to bring an intense burst of umami to salads, pasta and sauces. They are also exceptional eaten straight from the package.
